Food For Thought

While I was on my journey to find love for the food I was eating, rather than dread it, I came across many different recipes. I felt that what I most struggled with was balancing healthy food and junk food; I didn't think that you could consume both if you were trying to "diet". I tried every diet in the book; I even went vegan for a brief time. After realizing that it's about moderation and still enjoying life, I ended up with a bunch of recipes that happen to be something you can enjoy, but are also healthy for you.
Now, tofu is a tricky thing to like and it is one of the ways vegans/vegetarians get protein. I may not be vegan anymore, but I still enjoy tofu from time to time. However, I am all about texture and tofu has an odd one. I find that if you don't make it the right way, you will get discouraged and never try it again. After some trials and tribulations, the recipe I am going to share is my make shift tofu chicken nuggets. Fortunately, you only need three things. Tofu (I like the brand Nasoya), quinoa, and barbecue sauce.
TO DO:
preheat the oven to 425
cook 1/2 cup of quinoa on stovetop
take the cooked quinoa and tofu and mix in bowl
add bbq sauce into the mixture
cook in the oven for 15-20 or until brown
